Fewer than a third of American adults eat the amount of fruits and vegetables the government recommends, a trend that's remained steady for more than a decade, health officials said Thursday. That's "well below'' the government's goal of getting 75 percent of Americans to eat two servings of fruits and having half of the population consume three servings of vegetables each day by 2010, said Dr. Larry Cohen of the U.S. Centers for Disease Control and Prevention. |

What is Seitan?
Seitan is a vegetable food whose origins are not known; probably it is a traditional Middle-Eastern product. Macrobiotic cooking has spread its use in the West.
It is made of wheat gluten, has a very pleasant taste, is soft, easily digestible and is suited for all diets from children to the elderly.
It is particularly useful for who wants to pass from a diet rich in animal products to a more vegetarian diet, also because it is very similar to meat in its aspect and for its quickness of use.
From the nutritional point of view it has a protein content similar to meat and has a similar number of calories, but the quality of the protein is inferior to meat because it is a by-product of wheat (and therefore lacking in some essential amino acids, however its nutrient value can be increased by adding soy sauce to the dishes). In compensation it does not have fats and cholesterol.
CONSERVATION Seitan is stored in the refrigerator between 0 and 5 degrees.
If it is not all used it should be immersed completely in cold water in a hermetically sealed container renewing the water daily; in this way the product can be stored for several days.
USE It is recommended for all ages, from children to the elderly being very digestible, except for specific individual intolerances or allergies.
It is suitable for every type of dish and can replace meat in every traditional recipe but unlike meat doesn't need long cooking and it is ready in a few minutes, the cooking serves more to flavour it. |

What is Tofu?
Tofu is a curd of soya (like ricotta). According to the popular Chinese-Japanese Tradition, the Taoist monk Lin An, who lived around 160 BC, invented it. Tofu thanks to its high quality protein content and the absence of lactose and the low fat content, is a fundamental element for a healthy diet.
It is called "the chameleon of foods" for its typical property of absorbing the flavours which accompany it. Enriched with the tastes of good Mediterranean cooking it also satisfies the most demanding of palates.
Its principal characteristic is its excellent culinary malleability; as said it is suitable for a vast range of dishes of traditional, dietary, alternative or vegetarian cooking.
Conservation: Tofu should be stored in the refrigerator between 0 and 5 degrees.
Use: It is recommended for all ages, from weaning (7-8 months), except for specific individual intolerances or allergies. |

The BioFach 2007 takes place under the sign of Italy, the "Country of the Year" of this year's exhibition.
Maybe in no other sector there is such a deep and meaningful partnership between Italy and Germany: Germany is the biggest European consumer of organic food, Italy the biggest producing country. Even this branch presents a complementariness between these two countries which goes back to historic times and is based on a deep-rooted weaving of cultural, political and economic relationships that since two thousand years binds them tightly.

WHO WE ARE?:
We are a small artisan company operating in the sector of alternative food production. Our products are: Tofu, Seitan, Vegetarian Tofu Hamburgers, Ragout and Tofu Paté. Our aim is to produce foods of high quality using exclusively vegetable raw materials of biological origin.
BUSINESS STRUCTURE:
The firm is structured as an artisan business. The coordinator is Cannistrà Daniele, who is the commercial and technical representative.
THE HISTORY OF OUR TOFU PRODUCTION:
The project began many years ago from an idea of the founder who, being vegetarian and an attentive consumer of biological products, had a problem finding healthy, genuine but above all good and reasonably priced products on the market
Thanks to the awareness of the careful and demanding consumer combined with an experience of the Orient (where they use simple and ancient techniques) Armonia e Bontà was founded on the site of various Tofu production workshops.
The experience of the Orient and the inventiveness of the artisan of flavours have allowed the combining of traditional Asiatic flavours with Mediterranean requirements. So a product was created that merges the important properties of Tofu with the western demands for a more correct and balanced diet.
BUSINESS PHILOSOPHY:
Armonia e Bontà works in an artisan manner taking particular care of the workmanship so as to obtain a home-made product, but with the quality of a modern productive system.
To this purpose, a simple and effective computer system is applied in all the phases of the production process, starting from the selection of the suppliers and the raw materials, that guarantees the tracing of every single ingredient, and every individual phase of the production is kept under control so as to always guarantee the highest quality of the production system.
In addition we have the certification of a corporate body in charge of overseeing the biological method, which is another 100% guarantee for the final consumer.
Our products are prepared using exclusively vegetable ingredients, therefore they are without milk, eggs, and added sugars.
The extreme flexibility of the productive process of our laboratory allows us to make changes to the products on the price-list to meet any particular requirements of our customers either as far as packaging is concerned, or regarding the use of some ingredients not to their liking, if need be replacing them with others requested by the customer so as to meet the demands of local culinary traditions.
This way of operating allows us to cover the whole of the national territory satisfying the needs of culinary habits in every part of Italy.
LOGISTICS:
Our laboratory is situated in Crema a small town of the Padana plain just a few kms from Milan. We distribute our products using couriers with refrigerated transport, either directly or through our distributors.
